

COUNTRY BREAKFAST

| 3 Tablespoons butter |
6 eggs |
| 3C Italian bread cubes |
1/4 cup milk |
| 1/2 tsp seasoned salt |
1/2 cup grated cheddar cheese |
| 3/4 sliced mushrooms |
1/2 cup monterey jack cheese |
| 1/2 cup chopped onions |
6 slices cooked bacon, crumbled |
| 1/2 cup chopped red pepper |
pinch of pepper |

In a large bowl, whisk together the eggs, milk, and pepper. Add bread crumbs to soak. Melt butter in frying pan. Brown vegetables until crisp. Sprinkle with salt, mix well. Add mushrooms, onions and chopped peppers to eggs and bread crumb mix. Bake for 20 minutes at 475 or until omlet is golden and puffy. Remove from oven and sprinkle with chese, bacon bits and additional red pepper. Serve after cheese melts.
